A long long time ago in Italy, people loved to roast birds on sticks. But sometimes, they ran out of birds. So, they used meat rolls that looked like birds instead and joked that the birds had "escaped"! That's why the name "𝗘𝘀𝗰𝗮𝗽𝗲𝗱 𝗕𝗶𝗿𝗱𝘀"
Today this is a popular second course in various regions of Italy with slight variations depending on the place.
Our version of this old tale brings us straight to the 𝗘𝗺𝗶𝗹𝗶𝗮 𝗥𝗼𝗺𝗮𝗴𝗻𝗮 region where we use tasty and tender pork fillets wrapped in Prosciutto di Parma, cooked to perfection, and served with smooth and creamy mashed potatoes.
